Our simple protein pancake recipe

Pancakes a la Vesna style are the kids favorite! They ask for them every single day (not even kidding) and I love them that much more because they are loaded with goodies the kids cannot even taste. This is not your standard pancake recipe, as we have modified it to our liking so please don’t come at me 🙂 Having said that, I thought it should have a permanent spot on the blog as everyone always asks me what my kids eat for breakfast and how I make these pancakes.

I think it’s important for kids to have a nutritious breakfast, lunch and dinner but if you ask me, breakfast is the most important meal of the day. It’s how you start your day, the energy you get to carry you throughout the morning and if you don’t eat healthy, your body will slowly start to crash by noon. It is important to build our immune system with nutritious foods.

Pancakes a la Vesna style

  • 4 cups of flour
  • 2 eggs
  • 1 scoop of this Orgain Organic Protein Powder (we use chocolate only because we like the taste better for pancakes)
  • 2 scoops of chia seeds (we use these)
  • 1 scoop of ground flax seeds (we use these)
  • 1 scoop of this Peanut Butter Powder
  • 1 scoop of hemp seeds (we use these)
  • 3-4 cups of milk (you can add 2 cups of milk and 1 cup of water too) *I add mill as needed to make the mixture perfect

Mix everything together. Add milk and/or water as needed. You want the mixture to be not so thick and not so watery. Preheat the pan. Once heated, add two drops of oil and then pancake mixture. Repeat.

Eat plain or you can spread Nutella, Eurokrem or my kids favorite plum* or strawberry spread on them. They don’t like to eat them plain so I always add plum spread to theirs and roll it up.

You will notice how our pancakes are bigger than your standard ones and also not as thick, and that’s because we have modified them to our liking. Again, I rarely share recipes because I am not good at writing them so please don’t come at me haha! I wanted to share these because I always get asked about them whenever I share them on Instagram stories.

Here is a quick snapshot of why we use what we use:

Protein Powder contains high-quality essential and non-essential amino acids. Cha seeds are a great source of fiber, omega fatty acids, protein and antioxidants. Flaxseeds are rich in healthy fat, antioxidants, and fiber too. They contain protein, lignans, and the essential Omega-3. Hemp seeds are extremely healthy, for your heart and your brain development. They contain fatty acids, Omega-3s. They stimulate healthy digestion. Peanut Butter Powder has the protein and fiber, and helps improve metabolism and digestion. Essentially all these work really well together and are good for you. They are nutritious and the easiest way you can have all these nutriets in your body is by including these in your smoothies, pancakes or whatever else you may like to make.
